Much depends upon how long (and how high a temperature) you plan to cook in the slow cooker. Cream (and other dairy products) will tend to break during really long durations of cooking (proteins are bound more tightly during the cooking process, separating solids from fluid - thus splitting the mixture). It's best if you hold back any dairy products (even cheeses) until the last part of the cook, allowing enough time to heat everything through but not split. Hope this helps.
