This is an OUTSTANDING MACHINE!!!
The Buffalo 12 quart unit is Very NICE. The fit and finish are a beautiful high polished stainless. My first test was two cups of water on a portable induction burner. Up to full pressure in 5 mins on High and the center weight made a nice steady ratllesnack sound. I shut the burner off and lifted the weight to do rapid venting. Lots of STEAM!!! SO COOL!!! NEXT I browned some bacon and onions In the Buffalo 12 quart pot on high. Added 5 cups of water and 1 cup of DRY PINTO BEANS. DRY BEANS!!! LOCK & LOAD We HIT full pressure in about 10 mins. Cooked at pressure for 25 mins. Shut off and allowed slow cool down till red tits DROPPED 10 mins (very neat indicators) OPENED it up and had delicious tender beans from start to finish in 45 mins total. Unbelievable. Pintos used to take all day. The Buffalo pressure cooker is a game changer for me. I'm very glad I did NOT buy an instant pot. Way too many bells and whistles for me. I DON'T need more microprocessor electronics in my life. SIMPLICITY please!!! Very easy clean up. Very easy to lock and load too!!! I love my new machine! Next will be canning. It HOLDS 5 quart jars by the way. FIVE. Good cookware is NOT cheap Cheap cookware is NOT good. PS. This unit is very Safe and easy to operate. It exudes quality through out. My wife loves to do home canning and this presser cooker is perfect for her needs. Good quality and easy to use. We highly recommend this for your home canning needs.

It is an attractive, easy to operate, very well built and safe pressure cooker.
Total volume of 12 quarts means net 8 quarts of soup, or any other favorite dish of your choice. Though it is big, it's not too heavy. As oppose to some other pressure cookers that I have used, it is easy to operate and doesn't require an Engineering degree to do so. There are many safety measures on board. It looks attractive and cooks really fast.

Does not come with canning rack
this is specifically for the 32qt commercial series Does not come with canning rack... Was about to use the smaller unit I ordered more recently for the first time, but need to order a rack... Guess I should have opened the box before now... I suspect that none of the Buffalo Canners come with canning racks, so plan ahead. Otherwise, an attractive and solid unit. Will update reviews after I've used them. Consider this review to be generally positive for now. Just be aware...

Great results!
Use it every week. Large enough to can with. Induction capable, easy to clean, YES. Live in Colorado boiling point is impossible..! Have gone through numerous Pressure cooker devices, they don't hold up! Plastic parts densingrate with heat! As proof, Remember your grandmother's canning pressure cooker, I will bet it still works and you can buy a new ring. Try that with some new fancy ones! I have learned!

This it the best pressure cooker
This it the best pressure cooker, I have two, one from Fagor, but this one beats is my favorite. Made soup with whole chicken, it took only 23 min. Love it!
