How well do these hold up on a boat in saltwater environment?

The exterior is very tough. Also, they make a cover which would help protect it further, both from elements and from temperatures.

Can the ice maker zone be manually switched from “ice maker” mode to “ice maintenance” mode?

It comes with thermostats for each zone, no need for maintenance mode! It is designed just like your home fridge/freezer!

Are the walls insulated enough where it can act as a conventional cooler when power is not available?

Overland Joirnal did a fridge test and the smaller Dometic CFX65 was in the test. Warm up for the cooler to raise 10degrees took right around 18hours. As mentioned before it’s not any different than a cooler that doesn’t have a cooling source when not powered. But all said these units are so energy efficient there is no reason not run them. Even when say out of a vehicle using a portable power station. We run a fridge full time in our overland build. Though we do run 200ah lithium and 265watts solar. The fridge barely uses energy with the charging capabilities we have. Good luck

Can we use this at home as a portable fridge? Is it efficient with 110V?

I have used my dometic at home running off 110, I believe it would use similiar power. My 35 liter unit draws about 35-40 watts while running, and runs about 1/3 of the time. So even the larger unit should make only a small dent in your electric bill.
