History Balkan's long and affectionate relationship with yogurt dates back to the Thracians, ancient inhabitants of the Balkan Peninsula before more than 3000 years when stock-breeders placed sheep's milk in lambskin bags around their waists and fermented yogurt using their own body heat. The word 'yogurt' is derived from the words for 'thick' and 'milk' in ancient Thracian. In the early 1900s, a Bulgarian scientist called Dr. Stamen Grigorov, found an agent causing Bulgarian yogurt fermentation - a specific bacillus. Grigorov went on to pinpoint two more bacteria: a Streptobacillus and a harmful Streptoccus thermophilus which coexisted with that Lactobacillus in what appeared to be a perfect symbiosis. He also discovered that these two bacteria are not part of the micro-flora that exists in the human intestinal tract; however, they turn out to be very beneficial to it when introduced in it. Interested in Dr. Grigorov's discoveries, another scientist, the Russian Ilya Mechnikov, a Nobel Prize laureate in Physiology and Medicine, went on to discover that more people lived to the age of 100 in Bulgaria than in any of the 36 other countries he studied. He directly linked this to the country's most traditional food - yogurt. According to Metchnikoff's research, the ageing process results from the activity of putrefactive (proteolytic) microbes producing toxic substances in the large bowel. Based on these facts, Metchnikoff proposed that consumption of fermented milk would "seed" the intestine with harmless lactic-acid bacteria and decrease the intestinal pH and that this would suppress the growth of proteolytic bacteria, that he called "Bulgarian Bacillus". Very good product
Excellent quality - very soft yogurt and good texture from the start. I always add in the first batch two spoonful of regular yogurt and one spoon of powdered milk. Second and third batch don’t need this.

Benutze seit Jahren verschiedene Joghurtferment-Pulver von Probiotics Selection. Dieses hier funktioniert mit 3,5 Prozent Milch und meinem Joghurtmaker (Rommelsbacher JG80 - 1,2 Liter passen mit einem Tütchen ins große Glas) einwandfrei und ist bei längerer Dauer (voreingestellt sind 8 Stunden - ich lasse ihn 12 Stunden in der Maschine, da ich Joghurt gern etwas fester mag) suuuper lecker, gelingt sicher und hält sich im Kühlschrank im Glas auch tagelang. Kein Vergleich mit gekauftem Joghurt. Wer’s noch fester und säuerlicher mag, dem sei das Ferment für Bulgaria-Joghurt ans Herz gelegt.

Good yogurt starter for sensitive types
This is the first time I've been able to get homemade yogurt to work for me. This was also the first time I used a legitimate yogurt maker, so I'm sure that also helped. I tried the cooler method and mesophilic yogurt and both upset my sensitive system. I have food allergies, chemical allergies, and weird sensitivities to a lot of things and had no issues with this product (other than I can tell the probiotics are strong in this- but that's a good thing). I like the fact that there are no additives or weird extras in these packets- probably why it worked out for me. I also like this company because you know what probiotic strains are in it and it looks like they have other packets with specific strains to choose from. My first batch was fermented for 24 hours to eliminate as much lactose out of it as possible. It is a bit sour and tastes similar to my store-bought lactose free yogurt. This has more of a nice creamy kick at the end though that I enjoy. I will be curious to see how a 2nd batch works out from the 1st one. I will definitely be purchasing more from this company.

Works well, lovely flavour.
I eat a lot of yogurt and these work well. I use long life full fat dairy milk in the Ninja multi-cook. I tend to put two sachets in - one per litre but could probably use just one. The yogurt is thick for a normal yogurt but i drain it overnight for a greek style yogurt. I then use a little of the yogurt for the next 3 batches, before starting again with these starters. A good quality yogurt superior to the cheaper supermarket brands and less expensive than the superior versions.
