I want to know the difference between Valrhona 100% Pure cocoa in the 8.8oz tin, and Valrhona Chocolate Cocoa Powder 100% Cocoa in the l Lb bag?

I assume that the Valrhona 8.8oz tin is a product made by Valrhona, whereas the 1 pound bag is a repackaged product--that is the merchant buys a large commercial container of the Valrhona cocoa and repackages it in 1 pound bags for consumers.  In the repackage case, you must assume (and hope) that the merchant didn't use out-of-date product, introduce any foreign substances, etc.

Is this Dutch Processed Cocoa?

Yes it is.  It's right in the description: "Valrhona unsweetened, dutched cocoa powder."And no, you can't always substitute dutch processed for natural processed.  Dutch processed has a lower acidity. Recipes calling for natural processed usually also use baking soda to counter the higher acidity.

Question 3

How do you compare this cocoa with other high-ends, like Calleibaut? How about to store brands like Hersheys?

Have never tried Calleibaut, can only compare it to what I had previously been using, the unsweetened Girardelli's, which is pretty good, but this one is richer, much better.  I really only use it (a teaspoon or so) in my coffee every day.  And Hershey's is not even in the same league as the others, a vastly inferior brand of chocolate.  Actually, I was just in France and saw the Valrhona chocolate bars for sale there, then came home and found them at Trader Joe's too.  So I'm going to try a friend's suggestion by melting a square or two of it in my coffee next time.

Is this unsweetened cocoa powder?

I assume so. It worked very well in my recipes that called for unsweetened cocoa powder. The taste was stronger than the cocoa powders that I purchased from my local grocery store. Good product.
