Good for your stomach

Great way to start the speciality "yogurt"
I tried to use two capsules per 1/2 gallon milk per batch for 36 hours, then another batch at 24 hours, but the curds and whey had way too much separation. The family could not stand the "old sock smell." That is indicative of a healthy flora culture. IT IS ALIVE!!! I did not mind it at all. So I decreased each batch down to 1 capsule, so that does not separate as much, some odor but not as much, but it did not provide as much firmness as targeted. I have since started to use a scoop of "yogurt" from the previous batch and using it into the newly fermenting batch and that is providing a healthier colony. Scrum-dill-e-o-um-shuss and not nearly as much of the odor.
