Can you buy the chess pieces if they lose more than 2 pieces?

I don't believe so. You would have to buy the entire new set. There are a couple of blank discs. You can draw the symbol on one of them of the missing piece.

How well are the labels attached to the magnets? Do any fall off?

The chess figures seem to be on affixed to the magnets as a sticky label. After heavy use, the “label” of some pieces started peeling off at the edge. I reattached with some glue. I can say confidently that the “labels” don’t easily just fall off.

can the chess pieces be flipped to make checker pieces and still have different colored backs?

No but you can always play checkers with this
