One box makes an 8 inch cake, 2-3 inches high. If you want to take this cake, totally over the top, throw a handful of fresh or frozen raspberries into the mix and add 1 teaspoon of instant coffee powder or granules. I use decaf coffee granules. This cake is super rich, incredibly moist and beyond delicious. We bake two boxes and sandwich them together with chocolate ganache or buttercream. It also makes beautiful cupcakes!

After trying numerous recipes using almond flour, I had just about decided to give up on wheat flour alternatives. I am no Betty Crocker so I’ll never know where I went wrong or how it could have been fixed. After seeing the reviews and the ingredient list for the Simple Mills Muffin & Cake mixes, I order 3 flavors right off the bat (chocolate, pumpkin spice, and banana). They all turned out beautifully moist and delicious. I do need to mention that I did have some doubts about the banana muffins. Fresh out of the oven they were rather bland but after being frozen, thawed, and reheated they were a lot better. I will be reordering.
