Think of whole fruits, vegetables, nuts and seeds. Nothing processed in a bottle, box, can, or package is considered "raw." In addition, raw food has not been heated above 118°. There are differing opinions regarding the level of heat as to whether it should be 105°, 108° or 118°. Suffice it to say, any food heated above 118° is no longer "raw" and the nutritional value is likely compromised. What is the shelf life of the products? Laughing Giraffe's Snakaroons have a shelf life of 10 months from production. The Granola's shelf life is 10 months. Where is the expiration date located? Laughing Giraffe stickers and seals each bag along the very top of the pouch (the part you rip off to open the product). They code the products for 10 months for the snakaroons and 10 months for granola from the time of production. What kind/grade of Agave do you use? Laughing Giraffe uses a clear, light, low temperature (raw) agave. Organic light agave has a glycemic index of 11. That compares with boiled maple syrup at 54, pure honey at 58 and date paste of 104. When reviewing agave's attributes be sure to differentiate the clear or white (extracted from the cactus leaves by a special low heat process (105°)) and the dark agave that is obtained by boiling the root of the cactus. The lighter syrups undergo less heating and a more thorough filtration to produce a more mildly flavored product that is neutral enough to be used in many culinary applications. The darker syrups are filtered less, and the solids left in the syrup make for stronger nectar with a flavor sometimes compared to maple syrup. The dreaded high fructose corn syrup's GI is 87. Does Laughing Giraffe sprout their nuts? Laughing Giraffe do not sprout any of the nuts they use in their products. What is the best way to store their products and can they be refrigerated or frozen? The products also freeze really well if you are contemplating stocking up on a supply. Just keep in mind the lower the temperature of the product the firmer it will be so take a few out and let them get room temperature if you like a softer Snakaroon. If not refrigerated or frozen, the products, which are sensitive to the elements, should be stored in cool, dry location that is away from sunlight. I buy the products all the time and sometimes they are firmer than other times, why? The biggest contributor to this is temperature. In the colder months the products tend to be on the firmer side and in the warmer months on the softer side. There are many other factors that impact the dehydration process – particularly humidity. Laughing Giraffe does their best to produce a consistent product but there will always be some variance in the products due to nature of raw production. Are there any ingredients you omitted from the label? No, they believe in 100% transparency and would never use an ingredient that is not listed on the label. I hear agave is as bad as high fructose corn syrup, why do you use it? Based on the information available and their suppliers' testing, they feel that agave is a healthier alternative and is easier on the body system than refined cane sugar and certainly a MUCH better option than HFCS.
