Q: What's the biggest difference between this prodct the bread mix? I do all types of baking. Which is most versatile? Thanks!

There seems to be 3 baking mix products from Pamela...(1) A biscuit/pancake mix...(2) A bread mix with a gum substitute for gluten &...(3) A new ARTISAN FLOUR mix. My experience is slim with the new flour mix. They are suggesting on the back recipe panels that it can be used actually as a flour in either bread or pastry recipes. My experience so far is that the flour blend acts like a high gluten flour with a lot of grab...maybe too much. i don't use their bread mix because it seems slippery. I don't like slippery. I have both the PANCAKE/BISCUIT MIX which is quite versatile I've used it for years unless you are going to make bread..You wouldn't make bread with Bisquick, would you?...& the ARTISAN FLOUR BLEND which I am still experimenting with. It may turn out to be the answer for both pastry.....and breads. I'm not sure yet. Bottom line: the biscuit mix is for lighter pastries... the flour blend may be useful for both pastry and breads.

Q: Can I Keep This In The Refrigerator?

Yes. When I buy the 25lb bag I scoop the measured amount for a loaf of bread into ziplock freezer bags and put them in the freezer. Then I just pull one out as I need and let it sit at room temp before making. Have a Blessed Day.

Q: what is the expiration date if I were to order a 25lb bag today?

Usually the expiration date is many months away... the bag I most recently bought, the expiration date is Sept. 19, 2014. I put some into freezer bags this time. Sometimes I use a lot of flour, but sometimes I do not.

Q: can this be used for baking bread?

Pamela's does a great job of combining GF flours and starches for the best baking flavors. I have never used the pancake mix for anything other than sweet quick breads. It's fantastic for anything with a hint of sweet but I think you'd be better off with Pamela's GF Bread Mix.
