How many kids can play with this keyboard piano together at the same time?

I used this in my preschool class of rowdy 3's and 4 year olds. Not only did it not break but three kids played it at the same time. They loved it. I love that there is a volume control button!

Does this mat fold easily to into a manageable size?

Yes. Once batteries are added you have a single object that folds easily to fit into the box it comes in. Ideal!
