I have not used it for chocolate, only cheese. You make it as short or long as you like, I would guess.

As far as we know, there are no replacement blades. To re-sharpen this knife, use the same method as you use for any other knife

テテドモワンヌが大好きで、半年ほど悩んでついにチーズジロールを購入しました！オーストリアからはるばるやって来るので少し時間はかかりましたが、梱包、商品の状態も良く、とても良い物でした。力の加減は軽めにした方が薄く削れます。

This is a beautiful, well-made cheese slicer with excellent quality. It feels sturdy and works very well. Unfortunately, I had to return it because it was too bulky for my limited storage space. If you have the room, it’s a great product that I would recommend. A beautiful addition to your charcuterie board.
