I've gotta use flour with a lower glycemic index, and this fits the bill! I'll keep yall in the loop after my next bloodwork lol. Taste and texture is great. It's grittier than all-purpose flour (as expected), and I personally really like the more well rounded flavor. We've made cakes, cookies, breads, and so on with this stuff, and it turns out great. My lady and I would just be using it 1 to 1 with other flour types. It turns out a little different, but the result has always been wonderful.

See my photo ID of the Nutrition Facts on the bag that I recently received. Notice that it confirms that the bag contains 100% barley flour. What’s more, Amazon’s Product Description states that it’s whole grain flour. It will therefore contain all the fiber that barley can offer in a flour. Ambagious’ Feb 2024 review doubted that this product was 100% barley flour because s/he had the misfortune of owning a bag without the Nutrition Facts label. I wouldn’t have bought the product if I had read it before ordering. Fortunately, I read it after I was able to confirm the contents for myself. I hope today’s review helps future customers.
