The skinning knife with 15 cm long blade. As the name suggests, it is especially used for precise skinning, i.e. separating the skin from the animal body. Thanks to the specially shaped blade and long cutting edge, neither the skin nor the meat is damaged. The ErgoGrip series are the absolutely hygienic butcher knives for professional use - uncompromising in ergonomics and sharpness. Flawless hygiene, as there is no gap at the blade exit. In addition, the wide finger protection ensures more safety when working. Awarded the American hygiene and quality seal NSF. Blade made of X55CrMo14, blue handle made of non-slip plastic. The balanced hardness of 56 HRC is the ideal compromise for perfect edge retention and easy resharpening.
