Do they have pictorial stamps and animal, flower stamps? If yes, how many?

There are pictorial stamps, but not the whole collection. If you want 1,000 different stamps that are ALL pictorials, please search for this item: B07P714RKP. If you want flowers, I have a collection of 300 different, which you can find by searching for B00M887VIQ. For animals, I have a 200 different, search for B00MHT5MGY. I also have a 500 different, but I am currently out of stock, expecting more inventory to arrive on Tuesday. Search B00MHT5MGY.

Have these stamps been steamed off of envelopes or do they have the envelope paper on the backs? I don't know what "off-paper" means.

Hello. Off paper means that the stamps have been soaked from the paper they had been applied to. Steaming would cause the stamps to wrinkle. Some modern stamps (with self-stick adhesive) do not soak off the paper, so they are collected on paper. Unfortunately.

These are primarily stamps that were actually used, but there may be a few CTOs mixed in depending on the packet. Every packet is different.

I also bought a packet of 25 U.S stamps from the thirties and forties and some of them are also not in the album?
