will it work on honda shadow sprit 1100

I can't say with absolute authority but it works great with my honda shadow sabre 1100. Had it in winter storage last year on the jack and no problem at all and naturally no flat spots on the tires.

I would like to use something like this on a pretty tall dual sport bike (ktm 690 enduro). How stable is it at the full 16.5" extension height? Thx.

I have a 2009 KTM530EXC and I use this when I do wheel changes. It is stable enough that I feel comfortable leaving the bike wheel-less in the garage. I do not use the risers though...I just let the frame rest on the flat part of the jack. And I would not trust it with my daughter walking around the garage but it's fine when no one disturbs it. My KTM frame is 13.5 inches off ground at rest.

Does it lift the bike high enough to change forks? I got an fz07

That is all about angles and where you jack it. It worked on my chopper and electra glide pulling the front forks.

Will the removable frame adapters swivel to catch the frame?

Sort of...you can move the frame adapters horizontally along the length of the jack as needed. You can also unscrew the adapter up to approx. 2 inches before losing the threads--which helps adjust to fit your frame.The adapters are the least useful part of the jack. I use them less to catch the frame than to balance the frame on the jack itself.
