Do you think this can be used for bread proofing?

yes .place in base of cardboard box, or similar, pop in bread covered, and shut lid. I put a couple of slats of wood on mat and bowl on top of them to avoid touching.

If I were to use this to heat a box would it heat up the air quickly or is it only for heating the bottom of a tub which then heats the liquid inside?

Wont do to heat a box as it is not hot just slightly warm. Best used for brewing as low heat.

The replies i had saying the pad is cold on top because the bin is sucking out the heat is laughable. No heat equalls no heat

Yes, it's not a problem, just give it a mix as usual.. makesure any surface is heatproof though!!
