Dark Callets 70.4 % (2 lb)

This is the only chocolate I will buy. It's great quality, beautiful texture and color, it can be a little bit expensive but it's the only chocolate I buy. It's delicious and I'm able to temper it easily. If tempered correctly it has a beautiful shine. I have been using this for years and my chocolate and candy making and I think it's worth every penny.

I ordered these, as I was working toward doing the detox program in one of the books that I bought from Amazon. This chocolate was one of the things that was mentioned for the benefits of the 72+% cocoa and that it is better for your health also. I waited for the order to arrive, as I didn't want to have melted chocolate in my mailbox or porch. I was told it was shipping by FedEx, so I figured they would bring it to the door. I waited, and waited and waited, only no chocolate. Then I got to looking and saw that it was showing on Amazon that it delivered on one day and it was by the postoffice. I searched and no box. I contacted the company and they responded, after I had place a missing shipment flag. Although I still didn't have any answers, I only knew that my mailman was my only hope in finding my box. On the day it delivered the first round, he was out for a doctors visit and had a substitute. An "ah ha" moment. My mailman, after I spoke with him, searched high and low for where the sub had delivered my box. Well, as of today, my box was finally delivered to me. Several days late, but in good shape and the product was not melted, as we had some very warm days. Despite the mishap of the delivery system getting this to me, the product is very good and worth the delay. It is not bitter like some dark chocolates, but very smooth in texture and fantastic flavor without the lingering after bite. So, with the exception of the delivery failure/mishap, I will be looking to buy this again. It is really great chocolate!

I bought this chocolate after going to a cooking class with a Belgium chef and learning to make Molten Lava Cakes. She strongly recommended this brand of chocolate for baking, saying the flavor profile will shine through. They are chocolate chip sized pieces in a large foil bag. When you taste them, they melt smoothly on the tongue, and the complex flavor shines through at the end. A whole new level of chocolate chip that can be used for premium chocolate chip cookies, incorporated into other baked goods, or tempered for candy making. It also is much easier to measure by weight than cutting off a large block. The small pieces help it melts smoothly and easily. This is a chocolate that will appeal to dark chocolate fans if eaten alone. It also can be sweetened and diluted into recipes if desired.

I continue to be delighted with the chocolate and the company. The callets are mini-chips w/great dark chocolate flavor. At 70.5% cacao, they are a little healthier in small amounts. Cacaoholic promised that shipping to FL even in the hot summer would not melt the chocolate into a block. They do include cold packs. Next to the mailing label on external Cacaoholic packaging, they have large instructions to the Carrier to not leave the package in a hot truck all day, nor leave it in a mail box. My experience has been that Carriers left the package near my door without knocking or ringing the doorbell to indicate delivery. I still had no problem with the callets.

Always looking for the perfect cookie, the classic choco-chip cookie is the gold standard. These chips elevate your batch to a THAT level, I wouldn't tell you no lie ! First time buyer, long time repeat customer, that's me. Their customer service department is GREAT, too. Handled a product issue with me QUICKLY. Give it a shot, but make sure you have cold, whole milk available. UPDATE: The seller has upgraded their product packaging, they pack with freezer bags and an well-padded package. The chocolate is STILL AA-grade.

For those who truly LOVE the TASTE of good, DARK (real) bitter-sweet chocolate . . . You ain't gonna do better than this! NO nasty 'after-taste' at all. We tried all of the usual 'brands', but, were really disappointed with what is being sold to the 'public' these days. Go ahead; try your own 'taste test'. Between THIS, and their 'sister brand' (Van Leer, which is less expensive, but quite difficult to find except in the larger quantities), you just don't get BETTER than this. Want a nice 'treat'? If the 'sharpness' of the dark 'bitter-sweet' chocolate 'gets-to-you': Do THIS and their 53% or 60% product 'mixed' at a 50/50 ratio. Hey . . . some people do NOT like REAL ('extra sharp') Cheddar Cheese. What can I say???

the package spent a couple of days going back and forth between 2 postal regional centers and even with the delay in temps in the high 80's, only a couple of chips melted. I use these chips for snacking as well as for cooking and the flavor is great - if, like me, you like a really dark chocolate. And since so few melted, it was easy to chill them and break them into chips again so I could control the amount I snacked on.

Best chocolate chip cookies I have ever made! I will never buy chocolate from the grocery store again!
