Have to use a LOT for it to work
I got this butterfly pea powder because I remembered a brand of gin I had tried that used this extract for fun color changing properties. If you added lemon juice the gin turned from a dark purple to a bright fuscia. I tried making an iced latte a couple of times with this but ultimately, I realized it would require a lot of powder to get a decently bright color out of it. There is also pretty minimal taste. Ultimately, I may end up infusing my own bottle of gin with this because I don’t think I will continue to use this as advertised for lattes. On the plus side it did mix in easily, but the lack of true blue appearance based on following the directions was a bit of a let down. Will update if I do try the gin infusion!
