Is this honey pasteurized?

Hi, Thank you for your interest in our Leatherwood Honey. In answer to your question the answer is yes – not for food safety reasons but for quality purposes. The honey is heated and then quickly cooled at the time of bottling and this process delays the crystallization of the honey (or the candying of the honey). If we didn’t do this, the honey would be hard and candied before it reached New York. It allows the liquid honey to remain liquid for a good few years before it will naturally crystalize over time. Rest assured, it is not detrimental to the honey – if we heated it at a high temperature for a long time, that would damage the honey – but because it is heated and then cooled very quickly there is no damage done.
