Great flour for pizzas and baking
I'm really impressed with this flour and it's a definite five stars. I've been using it for my pizza dough and the results are consistently brilliant. The high protein content (14.5%) gives the dough incredible strength and elasticity. It can handle high hydration without becoming a sticky mess, and the rise you get is fantastic-loads of airy bubbles and a lovely, chewy texture to the crust. I've also found it works perfectly for long fermentations in the fridge, as it doesn't break down like some standard bread flours can. It's a bit more expensive than what you'd find in the supermarket, but the quality of the bake is on another level. If you're serious about your bread or pizza making, this is definitely worth the extra couple of pounds. It has quickly become a staple in my cupboard.

Good product , with an okay length. It’s a shame as I only got sent 1 of 6. Would have preferred the other 5 rather than a 5/6ths refund as the price has now gone up.

Gutes Pizzamehl mit hohem Glutengehalt
Auch wenn ich aktuell das "Nuvola"-Mehl aus der Mühle von Caputo nehme, das ich hervorragend finde, habe ich auch mit dem Manitoba-Mehl sehr schöne Ergebnisse erzielen können. Grundsätzlich hat mein Teig eine Hydration von rund 73. Also 730 ml Flüssigkeit auf 1000 g Mehl. Bei Manitoba ist ein bisschen Flüssigkeit mehr kein Problem. Das Ergebnis bleibt gut. Ein sehr dehnfähiger Teig, der sich erstklassig verarbeiten lässt. Für manche Teige greife ich gern wieder auf Manitoba zurück.
