This mineral oil soaked into my cheese board very well and left no surplus on the surface.

Would this be suitable for finishing wooden kids toys

I personally wouldn’t because it doesn’t fully dry/harden off, it remains a touch oily. It’s more suitable for ‘feeding’ wood. I would suggest using a varnish.

Does this make the wood darker

No. It brings out the grain in the wood but doesn’t change the colour.
