How does this compare to Bob's gluten free 1to 1 baking flower?

I don't the ingredient content of Bob's, Namaste however has no potato or corn starch in it or casein. The list of ingredients in most gluten free flours are very long. This is very clean and no preservatives. I use it for baking fresh breads and muffins. The come out very moist. I've been using it for several years.

There's no information on sugar content of this flour. Does anyone know? Thank you!

Can you make bread witb this and use yeast or not?

I found the trick to gluten free bread is if it calls for 3 cups of AP flour you would sub 2 cups gluten free AP flour with 1 cup of tapioca starch. Also if you want to be able to work with the dough to knead it or shape it, also add 1 TBSP psyllium husk powder. It is amazing the difference
