how wide is the cooking surface of the 8" skillet?

It is 6 inches. (Wish I had asked this question!) If you want the 8" cook surface, go with the 10" skillet.

How do you use it to fry eggs? Heat pan on high then add oil? When do you add the eggs?

Eggs stick when the pan is not hot enough. They also stick if the pan is too hot. I have this pan and fried eggs slide around like ice on Teflon. Nothing has stuck to this pan and it looks the same as new. Try the Mercury test: Heat the pan without any oil and drop some water off your fingers into the pan. If it sizzles away instantly, the pan is not hot enough. Keep doing it until the water forms a bead of water and rolls around in the pan like a ball of Mercury. This is the right temperature to start cooking. Wipe the pan with a small amount of olive oil with a paper towel so you have a thin coating, then add about a tablespoon of butter. When most of the butter foam disappears, add your egg and turn the heat down a notch.

For those of you who do not cook eggs in this pan, what do you primarily use it for?

Turkey or bison burgers, and eggs too. I used this twice at the lowest heat setting. Food stuck to the pan, I soaked it in Dawn and water, got it clean but it stained the pan. Instructions say not to use steel wool either.
