I damaged my favorite, a Pyrex brand one no longer available. It had a gloss smooth finish. What is the texture of the blade on this one?

it is a soft rubbery blade. It feels like it silicone of the same material that make the silicone baking sheet liners that I use in the oven. I have used it to stir pots over heat and so far so good.

Does this work well for turning pancakes and flans?

This isn't exactly thin, and it has rounded edges, making it a bit of a challenge to get under the edge of a pancake. I use a thin plastic flipper for that.

Does the end of the spatula come off? If it does, is it easy for food to find its way in the crevices? Is it easy to clean?

it does not come off. crevice isnt very deep so should be able to easily sponge clean. I highly recommend this spatula, its heavy duty, no buyers remorse.
