You only get one. I don’t know if you have experience with ostrich eggs, but they are pretty big.

Can these eggs be dyed, to make pysankas?

Yes. The dyeing will work better if you rub the shell with a cloth dipped in vinegar until the shell loses it's gloss. That can take a while. Also, the first color you use, usually yellow, may take a while to work. Make sure you plug the hole in the egg with beeswax.

what is the size of the drilled hole? Is it possible to purchase with a larger opening?

I would say the hole is about 5/8 inch to 3/4 inches across. That is pretty standard for most ostrich egg shells.
