DELICIOUS
I decided to purchase this instead of the usual extract to try when baking banana bread. Pleasantly surprised the flavor is amazing and I will probably continue using this instead of extract readily available in stores.

Good banana flavor
The emulsion has a thick texture, almost looks like rubber cement! But good banana flavor. I used it in a custard. Would be good for pudding, or cupcakes.

Warning -- Not for Uncooked / Unbaked Food
No where in the description did it warn that it required cooking or baking. After receiving the bottle I did see that the label has had such a warning added, but even that did not make clear that any food using it had to be heated to some unspecified high temperature. The description did refer to it being used in baked goods, but also suggested to "try it in . . . icings," something that I normally make with no heat, a strong indicator that heating was optional. It was used in making yogurt. That process involved heating the milk mixture and holding it at a warm temperature for many hours. Such application of heat seemed to constitute "cooking." We thought that would be enough. It was not.The result was a jar in which the mix had not solidified as yogurt made properly does. A yellowish liquid floated on top and it was obvious that even the lower part of the contents had not gelled. We still thought it was worth trying and stirred the entire lot together forming a mix with a consistency similar to a melted milkshake. There was a faint odor of banana. The result was absolutely vile. Presumably it was the propylene glycol in it that gave it the chemical flavor, almost like kerosene. Propylene glycol is used in anti-freeze and perhaps the flavor of anti-freeze would be similar. Maybe anti-freeze would be delicious if used in baked goods, I am not going to try it. Any actual banana flavor was overwhelmed by the chemical flavor. (I noted that at least one one review called this "organic;" that is way wrong.)I almost gave this product 2 stars because it might be good in foods that have been heated to some high temperature. But the failure to make this clear in the listing is simply unacceptable. Even the statement on the label "Requires cooking or baking" is too vague to inform what is needed to transform this from a vile, possibly poisonous, substance into a pleasing flavoring. Because of that uncertainty I am not risking future use of this product and have discarded the remainder.

Great taste and organic. I made banana muffins with cheese frosting, and it took me back to when my mom use to get the banana cream pies , taste just like them. Mmmm.
