I've bought this same salami in smaller sticks, locally, and don't remember it being as sour as this is. It's not so sour that it's a problem but I just remember it being tastier. Still, it is quite enjoyableThe size of the stick is a bit small for sandwiches but large for an appetizer (though one can easily cut the slices into fourths for the latter). 2.5 pounds is a big chub. I don't eat it that often - I hope it holds up.

When I lived in Illinois, I could buy Volpi Genova salami at many of the stores. It is not available here in far north Wisconsin. It is the best salami and well worth the price. You'll never eat another brand once you try this. Slice it thin, put it on Italian bread, and ooooooh you have heaven!!!

The right combination of meat , fat and salt makes this an excellent salami.
