Victorinox Honing Steel Black Plastic Handle, 10-Inch, Combination Cut (40582)

As a serious amateur cook, I've been adding some high quality knives to my arsenal, and I needed to get a serious steel. After a lot of shopping, I chose this one, and first impression is that this is it. I love the dual cut, with both a medium and an ultra-fine on the same tool. I tested it first on some cheap knives, then tried my Forschner slicing knife, and ultimately dared and tried it on my French Thiers-Issard Chef knife. In all cases, used right, it'll hone any decent edge to razor sharpness with no more than a half dozen strokes. The handle is plastic, not the world's prettiest, but it's solid, provides a good grip, and has the right symmetry to easily position the medium or fine hones. Construction is such that I expect it to last for a long time. And it really is made in England, NOT China. I'm pleased with it, and wouldn't hesitate to recommend it.Just to re-hash what shouldn't need saying, a honing steel is NOT a "knife sharpener." It is for honing and refreshing an existing edge, and will NOT create one where it doesn't exist.

Absolutely love the Victorinox products, and this is no exception. Some people might not understand that its not a knife "sharpener", rather that it's meant for honing the edge on your already sharp knife. I have a Victorinox boning knife that hadn't been put on a homing steel for some time, and a few passes with this bad boy put it back into top top shape. I was gliding through meats with ease like a hot knife through butter. If you know what you're doing, then buying this product is a no brainer. Reliable, and simple.

This honing steel rod is extremely effective at sharpening my kitchen knives in addition to my folding knives. I even got a fantastic edge on a box cutter with it. I had to dock it one star because it has the Victorinox name laser etched on the bottom portion of the steel and that interferes with the long sharpening passes I do with my knives. I have to position the rod a certain way so I don't go over it. The etching is pretty far down on the rod but I still find it to be a nuisance & unnecessary being how the name is also on the handle.

THIS IS NOT A COMBINATION STEEL. INACCURATE PRODUCT DISCRIPTION. This is a textured steel with lines all around. A combination steel is both smooth and textured.

I have purchased a bunch of knife sharpeners over the years, and nothing puts an edge on a knife like this one. It takes a bit of practice, but once you get it... there is nothing better.
