I've been using the Tojiro for the past few months and I've found it a joy to use
I had to wait a while for this knife to arrive from Japan, but the wait was worth it. I've been using the Tojiro for the past few months and I've found it a joy to use: versatile, durable, and great to handle. It's insanely sharp - rest the edge on top of a tomato and the blade will slice through it with very little assistance beyond gravity. I find the shape of the blade works well with almost any cutting action I've needed in the kitchen: chopping onions, slicing chicken, mashing garlic, slashing pieces of paper asunder for fun, etc. The Tojiro is a great knife at a good price.

This knife is a joy, it is seriously sharp
I've been looking for a decent low cost chef's knife for a while and I couldn't warrant the price of the "well known brands". I chanced upon this knife and the reviews convinced me to buy. One word "AMAZING" from the elegant hand written address label to the gold colored box it safely arrived in.This knife is a joy, it is seriously sharp. It feels very comfortable in the hand, well balanced and looks 100 times more expensive than it actually is! I will buy more Tojiro knifes in the future and would not hesitate to recommend them to anyone.

A great knife.
Fantastic! I got this as a present and it came nicely presented in a box. My boyfriend loves this knife. It's incredibly sharp, cuts well, it feels sturdy and of high quality. I would certainly recommend it.

Good quality, reasonable price.
Light, well made knife. Handle is comfortable and well made. Sharp on arrival, staying sharp into the second week. Suitable for smaller hands as well. Be careful with the Japanese style edge at the heel of the knife, easy to cut yourself if you're not used to it.

Good Value VG-10 Knife
Mine was dispatched from Amazon UK Warehouse.Great value knife.Good steel core, VG-10, takes a very nice edge.Was surprisingly sharp out of the box, easy enough to get a keener edge with a 5000 grit stone and leather strop.Finish was good though I touched it up in acouple of places with some fine wet and dry paper, not absolutely necessary.Food does tend to stick to the blade a little but not a major issue.Blade can be brought to a level of sharpness to that of knives costing 2-3 this price.

Doesn't disappoint
I bought this having bought the Tojiro Nakiri - this again doesn't disappoint. Comes razor sharp out the box and cuts smoothly and easily. Good balance, no rough edges on the spine or choil and the handle is smooth with no gaps against the bolster. Not sure why another reviewer says that as an experienced chef they think the quality is low when a quick Google shows many recommendations for this brand to professional chefs on the line doing prep who want an inexpensive but quality knife. These posts are what influenced my decision to buy.I actually prefer the 180mm to the 210mm for home use as I don't really end up needing the extra length for most tasks, and the 180mm has a slightly less flat profile on the belly of the knife and less of dropped tip. Just remember that these knives should not be steeled (use a whetstone at a 15 degree angle) and should not be used on any sharpener that doesn't say it is for Japanese knives as it'll be most likely set for European knife angle sharpening (20 degrees) which is also a softer steel.

Really Pleased
I don't ever write reviews although I buy loads of stuff for the holiday home family business. This purchase was actually a gift for my brother who is in to cooking. The knife arrived within 4 working days of the purchase which considering it came from Japan is impressive. The quality of the knife is excellent; nice clean joins, quality handle and a very strong sharp blade. I chose the knife as I read good things about Tojiro and the steel quality was good. Very pleased with my purchase! Another thing which was appreciated was a hand written note in English from the seller in Japan, who left a very lovely message along with a piece of origami. Part of the money from my purchase was donated to a charity which supports disabled people and this is where the gift of origami came from. All in all I can't fault anything about the product or service. Recommended!

Excellent knife
This is a very comfortable knife. It is my favourite knife to use, however, it isn't the sharpest nor can it take an edge as well and hold it as well as my Henckels. I am quite capable at re-grinding and putting a very keen edge on knives, and this just doesn't take as well as the Henckels do. It is very comfortable to use and is my favourite knife in my collection.It is still possible to make this VERY sharp, but relatively speaking I had hoped for more. I suggest grinding to 13 - 15 degrees. Out of the box it seems more like 30 degrees on the blade which isn't great.
