Lung Po Rock Crystal Sugar- What the heck am I supposed to do with this? I'm sure that is a very popular response for anyone who finds this product listing if they were not already familiar with it! In a word- AMAZING for cooking, replacing white sugar. I use it in spaghetti, soup, stews, and it's a secret weapon in my "Skilli".... that is "skill" and Chilli" together! LOL!If you have ever eaten Chinese food, Pho, and other sweet and savory dishes, you have eaten rock sugar. It is absolutely sugar, but it has a more mellow sweetning effect. Now I'm a big fan of those food and cooking shows. A term when describing sweetened dishes that is often batted around is, "cloying".... that sweet flavor that pushes sweet past the envelope where sweet bliss becomes a sweet MISS! Enter yellow rock sugar! (Not to be confused with rock candy, this is not as sweet as that either)Rock sugar has a less biting sweetness that is perfect for soup, stews, and other dishes where sweet is balancing the other flavor, and must play well with savory and piquant. As an example, you should never really know that there is sugar in spaghetti, stew, and specially chili. But if it's not in there, you will most certainly notice. Rock sugar let's you reel in the acid bite of tomato sauces or soy sauce dishes, without making your dish cloyingly sweet.Lung Po is easy to work with. They come in golden chunks that look like they came out of a gem mine. Hard as glass, I take several big chunks and put them into doubled zip cloture back and wrap in a cloth towel. I then either whack it several times wih a hammer, or I swing it into the sidewalk in front of the house until I get gumball sized chunks. You are not looking for granulated dust...just marble sized chunks.When cooking, use a chunk in place of a couple teaspoons of white granulated sugar and stir until dissolved. Taste and add as you like. You will find it gives a longer sweet finish that literally dances across the tongue instead of biting it. It will also add the slightest gloss to your soup or stew that is a nice addition.Try it- you will find that while its not a replacement for everyday white sugar or brown sugar, but it has unique qualities that once you try it, you'll want to keep a box of these little gems in YOUR secret cooking arsenal. Here's another teaser.....mix several chunks of rock sugar with 1/2 cup of your fave wine or beer into your BBQ sauce and simmer....it will take your BBQ sauce to new heights...try it and see for yourself!

Reminds me of my grandmother's cooking
This is the sugar that my mother and grandmother used in the kitchen. I never thought that I'd find it. This sugar has a cirtrus taste to it and is great in red bean soup and peanut soup (if you prefer your peanut soup with a slight citrus flavor).I highly recommend this product.

It gave nice rounding out flavor to Pho broth I made
I read some reviews after purchase where others apparently received what I did.....the label on the boxes I received call the product Rock Candy, not Rock Sugar. I started freaking out but after looking at the actual product and comparing to what I know is the correct item, this is the right stuff as far as I can tell. It gave nice rounding out flavor to Pho broth I made.

Fiend for Phở
I bought this rock sugar for my Vietnamese phở, hoping this was the ingredient I always seem to be missing when making phở broth. I made a pot of broth with this the other day, and while it still needs tweaking, I really think this is what I've been needing! I think the price is a little high, but not prohibitively so. I did notice however that the price went up several dollars since I placed my order on Dec 8. I may think twice about re-ordering and look somewhere else.
