Q: how do you work with sublimation with the heat press need help?

If you can set time and temperature it can work. I don’t have this press. BUT……. I work with Sub and as long as the temperature get hot enough it should infuse.

Q: Will this also work for infusible ink projects?

Yes. Works like a dream with infused inks.

Q: Can you use this to print onto a hard plastic switch plate (light switch cover)?

This is a large plate iron not a printer? This is used to heat things up and apply them to other items (usually HTV to fabric) - if the question is can you use this to iron on to a Plastic switch plate you would have to experiment to see if it would melt? You could try to use a metal Switch plate with Parchment paper so it doesn't stick to the iron.

Q: Can you create your own graphics to put onto the shirts ? Or they only what you provide ?

You can’t create graphics from a heat press which is what this question is attached to. Try to find a product linked to graphics for t-shirt printing
