Not versatile but does the job!
Not as versatile as ground almonds or coconut but does the job. I noticed that it remains very moist when used for (low carb/gluten free) baking so I recommend mixing with another flour or use for treats you want to remain nice and moist, like brownies.

amaranth flour
I have used this flour (for the first time ) in several recipes and I get a good texture but I always have heartburn after eating, for some reason, which I don't get when I use other GO flour.

indigestible
this is the worst amaranth flour I ever tried. I think they didn't denaturated it so it is very heavy to digest. I made some crackers that I usually do, and they give me a horrible bellyache, its bitter and difficult to work with
