Good quality mugi koji
Made ‘mugi miso’ with this. It’s been almost 6 months since I started fermenting it so it will be soon to be ready. Good quality mugi koji.

Used to make Shio Koji!
So far, I've used this to make Shio Koji, following the recipe on Serious Eats. Came out really well - works great for marinating meat, and used it to make vegetable pickles. Very tasty!!Next step will be to try the same thing with the Red-Label Koji from Rhapsody, just to see if there's any difference in taste. Fun experiments....

Grows fast and fragrant
I used this koji to prepare a rice koji for lentil miso. It grew fast, within 24hrs, and smelled really nice. Recommended.

I make myself this fermented koji staff at home, this is only Japanese special foods and good things is very healthy and great for human body. We can buy at Amazon, and this is organic and whole grain. This is real special food to get at Amazon. Thank you Amazon. I am very happy about it.
