Q: What is the shelf life of this product?

As long as they are sealed and dry, we've kept them in a ziplock bag after opening for a year or better; and unopened should be a couple of years.

Q: How do you get these crispy? I used a non-stick pan, was that the problem?

I have used these potatoes for years and lots of them, as I used them in my restaurant. If these are hydrated properly then they should not seem wet, or dripping water. To make them crispy is not a big problem. Heat up your non stick pan that you have wiped with a little oil on a cloth or paper towel. Add your potatoes, spread them out to the thickness you want, without being too thick. Then add oil to the potato's middle about an ounce or two. That's right add the oil after they are in the pan and right on top of then, The oil will drain down through them and brown and crisp the hash browns. Works with all kinds of potatoes fresh or these dehydrated ones also.

Q: Can you use these in funeral potatoes?

I think that is potato casserole? If yo soak them first and drain potatoes you can use in funeral potatoes
