Love Einkorn products! So much healthier than regular wheat (and better tasting too). I also bought Ms. Bartolucci's Einkorn cookbook here and have used it to make all kinds of great recipes with this Einkorn flour!

Makes terrific cakes as well as bread. So far a carrot cake and an apple sour cream cake both turned out superior to the regular flour version in taste and texture. From Nourished Kitchens: Sprouting grain accomplishes two primary goals: 1) it reduces phytic acid an antinutrient that binds important minerals like zinc preventing their full absorption, and 2) it fundamentally changes the nature of the carbohydrates present in grain converting them into vegetable sugars rather than difficult-to-digest starches. The resultant value in consuming sprouted grain is an increased ability to absorb the full spectrum of minerals present in grain coupled with better overall digestibility.
