How Did I Ever Live Without this Knife?!
I was tired of trying to trim tri tip with my chef knife so thought I would get a thinner knife. This knife is amazing! I was able to trim my tri tip in less than 15 minutes! Knife literally cuts through fat like butter. Wish I bought one years ago!

Nice grip and cuts through the meat fairly easy.
This is the first fish filet knife I have used so can't compare it with others. It has a nice grip and cut through the meat fairly easy. I have fileted 5 trout so far. The only problem I've had is when I hit one of the fins it has a difficult time cutting through. But I figure that has more to do with inexperience in fileting fish than the knife.

Nice every day knife
Comes pretty sharp, great sharpening tool included. Easy to use and easy to clean. A great length for making fileting easier. I use it to remove salmon skin often.

Great knife
I just love using this knife. I use it to trim briskets and other raw red meat. It glides through with ease.

So dull won't cut butter.
While the knife looks great, feels great in the hand is flexible just like it should be, it is as dull as a butter knife. It will take some work to sharpen it properly so it can be used to actually fillet fish.

Sharpness of Knife and lasting
I think the sharpness is not that lasting when filleting fish. Maybe the steel material or Hardness is no high enough
