Will this work to back up (time machine etc) a 2020 Mac Mini?

Not sure but it should do. It works perfectly well in my iMac.

Has anyone used this in a desktop/laptop? my 256gb samsung is filling up fast on my workhorse desktop and tempted to upgraded with a 1tb or 500gb. tia

I have this installed on my desktop. Primarily for quietness against the noisy hard drives, I still use the hard drives for some data needs. I have had the 500gb version since March, split into system and data. System is still less than half full, even though things like Office 365 reside in there. However, it is the cost that should make you purchase this. Incidentally, never had an issue since installation and the computer remains on, for no real reason.
