I would say the sides are higher than a standard frying pan, about 4" high ,and reminds me of a cast iron pan, its heavy and thick.

Q: What is the diameter, is it really 11 inches across?

The top is 11" across and the bottom is 9" across and 4" deep. The sides are slightly curved making the top wider than the bottom.

Q: Will the pan get burnt if oil is heated to smoking point? Can it be used for frying without the sticky oil residue that is difficult to clean?

This is the best pan I have ever had. I always clean my pans inside and out and any tough stains I use a brillo pad. I keep my pans so clean they look new. It is all stainless steel. It does not scratch and when clean shines. I have fried and boiled and the food cooks so evenly. I would recommend this pan 5 stars.
