Would these be suitable for helping attach a canoe to my vehicle?

A basic cinch strap will hold any canoe and/or kayak in place, where roof rails are used, on the top of any vehicle. If you use carabiners, don't use rachet straps, as the will over power the carabiner and deform the canoe or kayak.

Do you think these would work to attach a ratchet strap to an 18ft inflatable waterslide? They weigh about 400lbs.

I dont know if you can do that or not. But i do know this thing so far is border collie proof. I had to get these because my border collie knows how to get out of the regular caribeaners. He is like the worse car rider ever. The perfect service dog. Until he gets into my car. So i have to buckle him in for safety. Hes smart. Why hes my service dog. But these things are a god send in keeping my quite clever boy in check. (by the descriptions, the weight limit is 2697 lbs.... so i am guessing it is able to... ps...)

Thickest part of the carabiner itself is 7.25mm. 13.9mm for the auto locking barrel.

Can these be used with exercise resistance bands?

These are rated for climbing, cannot see why they would not work and be safe for resistance bands.
