Q: sHow easy are these to clean when used for something other than baked goods? For example roasting veggies.

So, backing sheets like this shouldn't really be used for both baking breads or pastries and then also for other types of cooking. For cooking food, you should take pans like this through a process that makes them non-stick, and that starts with seasoning the pan. You can watch professional cooks talk about this on Youtube. The point is, you leave an oil film and season pans you use for different types of food and there are some foods you don't start with because they're acidic and will stain and eat the coating. The pans will become dark over time. It's OK, really. Don't scrub them because that takes a protective surface off them. So, one set for baking, and those should stay nice and shiny, or looking clean and once again you should never have to do more than wipe them out so maybe with some baking you need parchment paper, and then another set for cooking, and those will get brown or blackish over time.

Q: Can I bake a sheet cake on this prism pan? I am concerned that the pattern on the bottom surface will affect the cake.

It's perfect for cake. The pattern does not show. I use the old-fashioned method of greasing with crisco and dusting with flour (or cocoa for chocolate).

Q: Do cookie bottoms get embossed marks after baking?

I haven't made cookies on them yet, but I have made homemade biscuits on them and the bottoms weren't embossed. I was a little leery about the cookie sheets at first, but I put a little baking spray on them and at least for me, they have been great. I hope this helps.

yes, but don't dig it in! I have used both metal and plastic--both are good. love this pan! cleans like a dream and no stains yet!
