White fungus, also known as snow ear fungus, is an edible fungus that grows on various deciduous trees in Asia. White fungus is flavorless but has an unusual, slippery, crunchy, gelatinous texture once re-hydrated. It is considered having many health benefits. Popular in Chinese cuisine and used in Chinese medicine for centuries, white fungus can be used in both sweet and savory soups and well as stir-fries. Steamed pear and almond soup with white fungus is thought to nourish and moisturize the lungs and skin, to quench thirst and expel phlegm. To use, soak the white fungus in plenty of water (or stock) for half an hour - it will multiply in size and turn semi-transparent. Trim away the hard base of the fungus. Add to stir fries and soups. You get 4 good size mushrooms!I made snow mushroom soupSnow fungusGoji berryLotus seedsRed jujube datesSweetened to taste with dark maple syrup.One snow mushroom is enough to make 3 to 4 servings. I soaked it in filtered water over night. I used approx 6 dates and just a couple of tablespoons of goji berry and a few lotus seeds. Simmer everything for 30 to 60 minutesSome people add chopped up pears or papayaI've learnt about all the skin and hair benefits. Also very good for the joints. Looking forward to all that but it is really delicious and I like the gelatinous texture.One thing I noticed is I slept longer and deeper than normal. Not sure if that's the tremella or another ingredient in the soup.If you can get to a Chinese supermarket these are half the price than on Amazon. However the convenience and delivery makes it more expensive here for those who can't access otherwise.

Incredible
These taste amazing and took on the flavours of broth and other seasonings. If you've had Wakame before, then I found it a similar texture, soft but still a bit chewy in a good way. Great addition to a noodle soup, popped it in to soak before going out but had to weight it down, drained, cooked, enjoyed. Ordeing more.

Very good product
Very good product. 3 big mushrooms. I used half of 1 of these, and it was soo much after blooming, I made up my 2 meals (soup for lunch and dinner). Tastes rubbery but nice. definitely will purchase again
