What are the assembled dimensions when setup for 4-bikes?

58" wide x 14.5" deep x 14.5" high. Fits perfectly in the bed of my pickup and holds the bikes securely, tho I do suggest strapping them down just to be safe. No straps needed for ground use.

Is it possible to configure this setup to only use 2 out of the 4 spaces? Meaning turn this into a 2 space unit only?

Yes, the 4 pieces click together, you can set it up for 2, 3, or 4 bikes. We use it as two 2-bike racks.

If I had 2 sets (1 for the front tires and 1 for the back), would it keep bikes sturdy enough to use in a cargo trailer?

you will still need to strap them done to prevent moving. I use one rack for the front tires in the bed of my pickup and a come-a-long strap to keep everything immobile.
