I've been looking for years for the chili powder that local Mexican cooks used for their enchilada sauce. This is it Dark, dark red with a smoky flavor. Not hot, mild. Make a roux with 3 tbls each of oil or lard and flour.Add 2 cups liquid broth. This is a rich gravy. If you want heat add cayenne or hot chilies to taste. Once you taste this you wont go back to anything else.

After living in New Mexico, I became very fond of Ancho Chile. This is the dried version of the Poblano Chile. The Ancho Chile imparts a sweet flavor and is not too hot at all. I would rate the hotness between mild and medium. Look for recipes using red chile and replace it with Ancho powder. You won't be disappointed and the price is absolutely right.

I haven't gotten it yet. And I don't know when I'll make chili next but the price and the size of the bag was a steal. Definitely will buy more if it's good
