Nearly Indestructible and Perfect for Sous Vide!

With a little trimming, works well with the Anova immersion circulator
I received an Anova immersion circulator as a gift, but I don't want to tie up a stockpot every time I use it. These Cambro boxes really seem like the best option for creating a water oven, though the Anova isn't quite designed to fit the lip that the Cambro has. But, with a little work, a bit of masking tape, and some patience, a good fit can be had.The trick to cutting polycarbonate is to cut the material through masking tape. I used a Dremel with a tungsten carbide bit at 10,000 RPM to prevent overheating. Cutting a notch about the size of the tip of my thumb on one short end's lip allows the clamp to pass through the lip and compress directly on the wall of the box, creating a snug fit. Now I have the water oven I want (I also bought the lid and cut that - a bit more work, but well worth it) and no pots are tied up during the cooking process.As far as the box itself goes - it's well made, quality material. There's a reason that chefs use tons of these things. They're strong, easy to clean, easy to sanitize, and will take a bit of abuse.

For Sous Vide, Marinating, Storage
I bought this to use with my Anova Precision circulator to cook larger pieces of meat sous-vide. Buying this and the sliding top that goes with it wasn't cheap, but it was worth the utility and convenience. The hard plastic doesn't give under the weight of the water, so I'm able to move it even once it's filled. The Anova's clamp fits perfectly and securely -- I just have to remember to fit it on one end to work with the lid.Of course, this tub can be used for things other than sous-vide cooking: marinating, storage, anything that requires a large, rigid tub. It measures roughly 18" long x 11" wide x 9" tall. This does not come with the lid, which must be purchased separately.-- Debbie Lee Wesselmann

Excellent product, works great with Anova sous vide circulator
Bought this to use with my Anova immersion circulator (http://www.amazon.com/Anova-Sous-Vide-Immersion-Circulator/dp/B00GT753W8/). Also purchased the sliding lid to go with it (http://www.amazon.com/gp/product/B0001MRVN6/). Works very well. A lot of questions regarding these products are about how well the circulator attaches to this container. The short answer is "Not perfect, but good enough". If you were just using this container, the Anova *does* fit. You have to pay close attention to the screw clasp, and get it under the lip of the edge, but without the sliding lid, the Anova fits securely - if not 100% upright - on to the container. With the sliding lid, there's no way to securely fit the Anova on. However, I've found that it doesn't matter - the setup pictured here is secure enough. If you think you're going to have rogue dogs or toddlers having their way with this, you may want to secure it better. If it's going to sit on your countertop like mine, this setup works great.You could cut out a 1-inch section of the lid, to create a more secure mount. I think this would be fairly easy.The sliding lid obviously doesn't close all the way, as the circulator itself obstructs it. I find at normal sous vide temps that I just have to top off the water every 6-8 hours. You could cover the gaps with plastic wrap or foil if you wanted.

Strong, Light Weight Water Container for Immersion Circulator/Heater
I agree with many other reviewers that this is a fine choice for a water vessel for use with an immersion circulator/heater for sous vide cooking, particularly if you use a PolyScience rectangular circulator. The polycarbonate tolerates a range of sub-boiling temperatures without deforming in any noticeable way. While I do not recommend moving the container due to risk of spilling and the weight when it is full of water and product, the body of the container is strong enough so that it could be done.If you use a round-bodied circulator/heater, this bottom works fine...but purchase the lid with a round cutout to insert the circulator.

Great for sous vide
We use this as a container for sous vide. I have to say that so far it is really nice. It is a very sturdy container. Its cheaper than some of the other containers that I've seen and it is a great size. Not too big and not too small. I should get a lid for it but so far we have just wrapped the top with plastic wrap and that kept evaporation to a minimum. I'm very happy so far.

Nice sous vide bin
I purchased this to use with my sous vide machine. It's a good quality bin... nice large size container. The only reason I gave it 4 instead of 5 stars is that the rim of the container is a bit thick. My machine has a hard time clipping onto the side, and if you want to use a binder clip to hold bags to the side, it's going to have to be a pretty giant clip. Nevertheless, nice container, works really well to sous vide in.
