has anybody ever used it to make meat or fish carpaccios??

yessssssssssssss.....robalo .... that fish should be slightly frozen and slicing more easily: in very thin slices, you make a vinaigrette of garlic, ginger and finely chopped parsley and olive oil .... freshly ground pepper last:)

Can the blades be replaced and/sharpened?

DON'T LISTEN TO PEOPLE WHO IGNORANTLY SAY THE BLADES CANNOT BE SHARPENED! Of course they can be sharpened. Even the official Bron sales video shows it being done. It's a simple bit of disassembly. Please do NOT follow the misguided advice from videos that show the blade being "sharpened" while still mounted in the mandoline. Only the bottom side edge should be sharpened, and the factory-established angle should be carefully followed.

Does it come with the piece for making waffle cuts? If not, where is it listed for purchase?

Waffle cuts don't require a separate attachment. There is a wavy blade in addition to the straight blade. After adjusting its depth of cut carefully, you pass your vegetable across the wavy blade, turning it 1/4 turn (90˚) each time. This means you can't use the sliding carriage, so I'd recommend you get cut-resistant gloves (available on Amazon) for holding the vegetable.
