Q: Can someone clarify the actual size/dimensions of this item? Are these really 18" tall?

I think where the confusion is that the measurements that are given is of the container height given by the seller is the containers stacked together. (in this case two 6-qt.) The actually height for one 6-qt. container is with lid is 8". The base width is 7 1/2". The top measured across from edge to edge without the lid or handles measured in. Is 8 7/8". With the lid and handles measured in. You are looking at a total of 10". I also have the 1 qt. size which measure with lid at 5" tall, with a base measurement of 4-1/4" and the top without the lid at 5". With the lid on it measure 5" across the opening. With the lid on and handles taken into the measurement it measure 6-1/8" Max space needed for including the handles. Hope this helps

Q: What grade of plastic are these made of?

The bottom of my Cambro 6 qt. container is embossed with:NSF in a circle = National Sanitary Foundation approvedA glass and fork in a circle = Food GradeRFS6 = Cambro product codeRecycle symbol enclosing a 5 indicates the recycling grade. (difficult to recycle)PP enclosed in a circle = polypropylene as is commonly used in 'Tupperware'

Q: What makes these different from Rubbermaid or other food storage containers - Couldn't they be used to store bread dough just as easily?

I think any fairly air tight container would work. One nice thing about these is the height allows me to mix and store in the same container. If it was much smaller, this wouldn't work and I'd have to dirty up two things to make dough.

Q: Does this come with 1 or 2 lids?

It comes with the corresponding number of lids that go with the set purchased. Two-piece sets have 2 lids; 3-piece sets have 3 lids.
