Know your yeasts
This yeast is a Sherman tank. Very low nutrient requirement. Very high attenuation. Very low ester production. Will handle rough conditions. Great for secondary bottle fermentation of a sparkling wine. Not great for primary fermentation.

A great way to ruin a batch
This was dead on arrival. It's supposed to be refrigerated but arrived in a regular shipping box with some other stuff I ordered, and after pitching it into a mug of water with a bit of sugar it did nothing at all. I added it to my fermenter anyway, hoping it might wake up after a while, and there's no activity after two days. I have no idea how it was stored at the warehouse, but the between that and sitting in a shipping box for a few days it was totally dead.It's a shame because Lalvin yeast is usually very good. Maybe I was just unlucky this time. I've had success with mail ordered dry yeast in the past, but I won't be ordering any more of this.

Awesome predictable product!
For fruit wine this is one of two I will use anymore. It starts easy. It performs well bewtween 70 and 80 degrees. It can be encouraged to burn a wine from 1.100 SG to 094 to give a pretty high ABV and very dry and then to the degree I want, I back sweeten with a simple syrup made with a combination of sugar and honey. I am pretty careful, BUT NOT AN EXPERT, about the process and wines turn out very good, even before aging. No off flavors.Terrific product. Thanks!
