Q: Can this be used offline, i.e. with no internet connection?

While Sense store and process some data locally, this capacity is limited. In order to function as expected, it is recommended that Sense is consistently connected to your wifi network. In the future, we would like to develop a local-only solution, but we are not quite there yet.

Q: I have a main panel outside which feeds two 200 amp sub-panels inside. Where do I install the clamps and the breaker?

You should install Sense in the main panel. Sense tech support is very responsive. I would confirm this with them. They helped me before I had purchased the unit and continued helping me getting the system installed.

It tries to learn the power profile of each appliance. When you turn your hair dryer on, the current through the main changes by a somewhat stable amount and in a typical way. Let's say in increases by 14.2 amps immediately at startup and then stabilizes 1.5 seconds later at 10.4 amps. After it sees this a few times, it learns the pattern. Once it has the pattern, it watches for near identical changes to the main current and assumes its the same device being used.

Not exactly in the way you're talking about.
