Can someone please list all of the items included in the set? It says 24 items, but I have a hard time telling from the image.

Wash cloth,scrub pad,spoons,forks,cutting board,sauce containers,knife,whisk,cheese grader,spatula,big spoon,salt and pepper shaker,spice container a few more items I can't remember with out unpacking my camping gear. I just used it on a 5 day camping trip with my family and it was great to have and very handy to have.

what are the squeeze tubes for?

are the dimensions of the set once it is zipped up, or opened up?

The product dimensions are the item when it's zipped up. Mine is actually only 3" thick and I have it stuffed with extras so I think 3.5" is the maximum thickness. It is approximately 16" wide when it's unzipped and laid open like a book.

Wouuld this be good for backpacking?

I would say so. It's pretty compact and has pretty much everything you need.
